When is Priedite open, and what is served which day?

Priedite's own site lists Bandito Burgers and BBQ tacos on Thursday, Friday and Sunday, and the BBQ Round Up every Saturday, all 11am to 4pm "or sell out", first come, first served. Hours can change for special events, and Priedite's events calendar shows them. The next closure on the events calendar is Thanksgiving, Thursday Nov 26, 2026, with burgers and tacos back on Friday Nov 27. Saturday specials are posted on Instagram.

Bodega, the wine and beer garden out front, is open Thursday to Sunday 11am to 6pm, per its own site, so you can wait with a glass.

Is there a line at Priedite?

Yes. Our founder has seen a line outside every time he's been, and everything is first come, first served until it sells out. Go close to the 11am opening, especially for Saturday's BBQ Round Up.

What should you order at Priedite?

Brisket, ribs, housemade ranchero sausage and chopped pork, all smoked over oak from the area: that is Priedite's own description of its "old-school barbecue with modern techniques", with sides and desserts drawn from California ranchero cooking. It doesn't post a price list. Texas Monthly's barbecue editor Daniel Vaughn picked out the Ranchero Sausage, the pork ribs, the brisket, house-made beef-fat tortillas and the pinquito bean bowl, made with ancho and morita chiles. His pro tip: the buttermilk pudding comes with jam from in-season fruit grown in the area.

Is Priedite on Texas Monthly's list?

Yes. Texas Monthly included Priedite Barbecue in "The United States of Texas Barbecue", its list of the best Texas-style barbecue outside Texas. Its write-up says Nicholas Priedite sold takeout meals after the pandemic ended his hospitality job, until "the first official pop-up for Priedite Barbecue, on Labor Day 2021," served from folding tables under a tent, before the new food truck moved into Bodega's back lot. The earlier chapters fit the same story: the Santa Barbara Independent says Greg Ryan hosted Priedite for a Labor Day barbecue in 2019, and Priedite's own site puts its first event with Daisy and Greg Ryan on March 15, 2020; SFGATE says it started in the lot behind Bell's.

Did Priedite start behind Bell's?

It did. In 2020 Priedite began as a roughly weekly pop-up in an empty lot behind Bell's, with Michelin-starred Daisy and Greg Ryan backing it, and the line drank Bell's coffee while it waited (SFGATE). Greg Ryan had hosted Nick Priedite for a Labor Day barbecue in 2019, then talked him into cooking Saturdays next door instead of moving to Texas (Santa Barbara Independent). The smokers and food truck now live for good in Bodega's back lot, a few blocks down Bell Street. It's still in the family: Bodega, Bell's, Bar Le Côte and Priedite all sit under the Ryans' Companion Hospitality, which co-owns Bodega with its founder Alana Stipech and is an operating partner in Priedite.

Who runs Priedite Barbecue?

Pitmaster Nicholas Priedite, a former bar director at The Lark in Santa Barbara who started with 805 Smoke Co., and partner Brendan Dwan, formerly general manager of the Boathouse at Hendry's Beach. Per Priedite's site, Dwan came on as a partner in 2020, as the pop-ups gained momentum.
